A creative dish, “Ajvar-fries”, are a creative twist of crispy, deep-fried sticks made from Ajvar. The fries have a rich red-orange hue and are made out of the hearthy, smoky Ajvar red pepper spread.
The Ajvar fries were created by a team consisting of several top Macedonian cooks together with researchers from the Institute of Agriculture. The project was supported by FITR, the Macedonian Innovation Fond. There is currently still a discussion about the final name, and the Ministry of Culture has installed a working group to come up with suggestions.
Here’s how they can be made at home:
Ingredients:
- 1 cup Ajvar (mild or spicy)
- 1/2 cup mashed potatoes (acts as a binder)
- 1/4 cup cornstarch or flour
- 1/4 cup grated FETA cheese (optional, for extra crispiness)
- 1/2 teaspoon salt
- 1/2 teaspoon paprika (optional)
- 1 egg (for binding, optional)
- Breadcrumbs or panko (for coating)
- Olive Oil for frying
Instructions:
- Prepare the mixture: In a bowl, mix Ajvar, mashed potatoes, cornstarch (or flour), cheese, salt, and paprika until it forms a thick, moldable dough. If too wet, add a little more flour.
- Shape into fries: Spread the mixture onto a baking sheet to about 1/2-inch thickness, then freeze for 30 minutes to firm up. Cut into thin, fry-like strips.
- Coat for crispiness: Dredge each strip in flour, dip in beaten egg (if using), then coat in breadcrumbs or panko for extra crunch.
- Fry until golden: Heat oil to 350°F (175°C) and fry the Ajvar-fries in small batches until crispy and golden (about 2-3 minutes). Drain on paper towels.
- Serve & enjoy: Serve hot with a creamy garlic or yogurt-based dipping sauce.
